Kiwi fruit is often overlooked, but is one of the largest fruit sources of Vitamin C. It also contains Vitamin E , Magnesium and other amazing nutrients for your body and skin. You can easily peel and eat them as a snack, but I found juicing them or adding them to my morning smoothie to be a great easy way to enjoy them all summer long!
The self-proclaimed “Juice Nut” gives us this great blurb about the history of the kiwi:
Also known as the Chinese gooseberry, this fruit was, for marketing reasons, renamed kiwifruit by New Zealand exporters, after the bird and New Zealand’s national symbol, and also a colloquial name for the New Zealand people. Today, kiwis are cultivated in California and New Zealand. This allows us to have fresh kiwis all year round.
She recommends juicing them straight – skin, seeds and all (after proper rinsing, of course.) The tiny black seeds contain Omega 3s, and since they are edible – a nice bonus!
Kiwi Melon Smoothie, Courtesy of Bon Apetit:
2 cups 1-inch cubes peeled seeded honeydew melon
2 cups crushed ice
1 1/4 cups 1/2-inch cubes peeled kiwi
10 large fresh mint leaves
1 tablespoon fresh lime juice
1 tablespoon honey
Combine all ingredient sin high power blender and blend until smooth
Kiwi Avocado Smoothie, courtesy of Bite Delite:
4-6 kiwi fruits
4 tablespoons lemon juice
1/4 cup of water
desiccated coconuts and fresh baby spinach (or other leafy green) for decorations
In a blender, purée until smooth: avocado, kiwi, lemon juice and water.
Pour into glasses and garnish with spinach and coconuts.
